Sunday sweet, Sunday sweet, it’s time for Sunday sweet.
But first…..the doll of doom. I’m beginning to think that “evil dead doll” as I have taken to calling her, is either a voodoo doll from an angry Chinese factory worker, a poppet from a Salem witch, or a gypsy soul catcher. It remains to be seen. Until then, I’ll allow the Peanut to drag it behind her at all times. She seems to like doing that.
Though it may be influencing her already…..If I turn up as a headless corpse; blame the doll. Or that bitch from the volleyball team. She *really* didn’t like me. She probably likes me less now, as I am super liberal.
Ok, Ok, on to my Sunday Sweet. IT’S BREAKFAST!!!! Mostly because my children demand this meal from me every morning!
Actually, it is I who demands this meal. COWER!!!!
It’s still peach season, which is just peachy. Unfortunately the last crop I got weren’t that sweet and needed a bit of help. So I sauteed them with strawberries and a tiny bit of butter and honey, and then dumped them atop a pile of steaming hot waffles, made with Chobani peach yogurt. I used AP flour, because it’s Sunday, and I was feeling generous. Not generous enough to use pastry flour; a girl has her limits.
Peach Chobani Waffles!!!
Ingredients
- 2 cups AP flour, sifted
- 3 eggs
- 2 tsp baking soda
- 1 cup peach chobani
- 1 cup vanilla coconut milk
- 1 tbsp vanilla extract
- 1/2 tsp salt
- 1 cup diced peaches
- 1 tbsp coconut oil (liquid form)
- 1 tbsp coconut oil (for greasing waffle iron)
Instructions
- beat all ingredients together, save for peaches
- fold in peaches
- grease preheated waffle iron with coconut oil
- pour in batter to just top the impressions
- cook until ping
- top with syrup or cooked fruit.
